1/2 Cup Brazil Nuts 1/2 Cup Macadamia Nuts 3 Tablespoons of Cocoa
1 Cup Coconut Chips
1/4 Cup Raisins* 2 Tablespoons of Coconut Oil 2 Teaspoons Ground Coffee 1 Tablespoon of Chia Seeds
Sprinkle of Cinnamon
*Try and find raisins that have don’t have Canola Oil in them
Put the nuts and coconut chips into a food processor and blend for 3-4 minutes until wellcrushed. Add in the raisins and coconut oil and blend for another minute or so. Add the rest of the ingredients and blend until well combined.
Roll into balls with your hands and put on baking paper – you might need to really push the mixture together to get the balls to come together, just work with it, enjoy the mess! Pop them in the fridge to harden up – and store there until needed.
For that festive look, garnish with a little dark chocolate, a cranberry and a baby basil leaf – if you are taking them to work, they’re best just left plain so as not to call attention to them, hopefully you’ll have leftovers ;-)
ORANGE, FENNEL & PARSLEY SALAD
2 Oranges 1 Large Bulb of Fennel (or 2 small) Big Bunch of Flat Leaf Parsley Handful of Snow Peas
Dressing 2 Tablespoons Olive Oil Couple of squeezes of Orange Juice (from the above oranges) Zest of 1 Orange (from one of the above oranges) Pinch of Salt Ground Black Pepper
Grate the zest of one orange into a jug (or small bowl). Cut the ends off each orange and squeeze out the juice from the ends into the jug. Add the rest of the dressing ingredients and set aside.
Slice the rest of the skin off and cut orange flesh into segments. Place orange segments into a salad bowl. Thinly slice the fennel and snow peas and add to the bowl. Pick the leaves off the parsley and add in – toss gently.
Just before serving, whisk the dressing well and pour over salad – enjoy!
A mixed plate is a great idea for christmas instead of your bowls of chips and salty nuts.

Few Grape Tomatoes
Couple of Little Bird Crackers
Dollop of homemade Mayo
Mix and match whatever you have on hand, add in some nuts, or nut butter, olives or pickles, cold meat, few slices of fruit.
