EASY CHICKEN & VEGIE SOUP
CHICKEN BROTH (You can use pre-made, I prefer to make my own)
1x whole free range chicken
1x whole onion
2x celery stalks
Pinch of celtic sea salt
3x celery stalks
1x shallot stalks
Celtic sea salt to taste
Chicken broth or chicken stock
1. Cut up vegetables chunky and put in a large pot with the whoel chicken.
2. Fill the pot up with water enough to cover the chicken.
3. Cover and cook on medium heat until chicken is cooked through.
4. Take chicken out of the pot and place aside.
5. Drain the vegetables from the broth ensuring to keep the broth.
6. Drain the fat from the broth by pouring it through a paper towel funnel into another pot.
1. Cut up vegetable into medium sized peices.
2. Put the drained broth or chicken stock into the large pot and on medium heat.
3. Place the vegetables into the pot and cover.
4. Shred chicken.
5. Once vegetables are cooked add in the shredded chicken to heat.
You can freeze portions and will last in the fridge for a couple of days.
SIMPLE CHICKEN & VEGETABLES
1x Chicken breast
(Any vegetable you prefer)
Grass fed butter
Celtic Sea salt
Pepper to taste
1. Peel and steam sweet potato until it is cooked.
2. Heat butter in a pan. Cut chicken breast in half. Season with celtic sea salt and pepper and cook.
3. Steam broccoli until desired texture.
4. Drain and mash sweet potato with a small amount of grass fed butter.
5. Plate up and serve chicken with seeded mustard.
BREAKFAST OR MORNING TEA PANCAKES
1/2x Cup wholegrain oats
2tbls almond milk (check consistency)
2tbls cottage cheese (optional)
Coconut oil (to cook with)
1. Blend all ingredients together.
2. Heat coconut oil in a pan.
3. Pour batter into a pancake.
4. Once you can see small bubbles appearing turn the pancake over.
5. Serve with fresh fruit.
